Ingredients
– 1 cup rolled oats
– 1 cup yogurt
– 1 cup mixed berries
– 1/4 cup honey or maple syrup
– 1/2 cup nuts (like almonds or walnuts)
– 1/2 tsp cinnamon
– 1/4 cup shredded coconut
– 1/4 cup seeds (like chia or pumpkin seeds)
– 1/2 tsp vanilla extract
Method
1. Preheat the oven to 180°C. Spread oats on a baking tray and bake for 10 minutes until slightly toasted.
2. Prepare the yogurt by mixing in vanilla extract and a little honey or maple syrup for sweetness.
3. Once the oats are cool, combine them with nuts, seeds, shredded coconut, and cinnamon in a bowl.
4. In four glasses, layer the yogurt mixture, then add some berries and the oat mixture. Repeat layers until the glasses are full.
5. Top each parfait with extra berries and a drizzle of honey or maple syrup.
