Ingredients

– 200 g digestive biscuits
– 100 g unsalted butter, melted
– 300 g sugar
– 100 ml water
– 300 ml thickened cream
– 300 g dark chocolate, chopped
– 1 teaspoon sea salt
– 2 tablespoons butter
– 2 eggs
– 1 teaspoon vanilla extract

Method

1. Crush the digestive biscuits into fine crumbs using a food processor or by placing them in a zip-lock bag and using a rolling pin.
2. Mix the biscuit crumbs with melted butter until well combined and press the mixture into a tart tin to form the base.
3. In a saucepan, heat sugar and water over medium heat until the sugar dissolves, then let it boil until it turns a golden brown color to make the caramel.
4. Remove from heat and carefully stir in cream, salt, and butter until smooth. Let the mixture cool slightly before adding the chopped dark chocolate and stirring until melted.
5. Pour the chocolate caramel filling into the tart crust. Refrigerate for at least 4 hours to set before serving.
