Method
1. Begin by preheating the oven to 180°C. Line a baking tray with baking paper.
2. In a large bowl, combine the softened butter, brown sugar, and granulated sugar. Beat until the mixture is creamy.
3. Add the egg and vanilla extract, mixing them in until smooth.
4. Stir in the flour, baking soda, and salt until just combined. Fold in the oats and chocolate chips gently.
5. Scoop spoonfuls of dough onto the lined baking tray, leaving space between each cookie. Bake for 10-12 minutes until golden brown.
