Braised Venison Stew With Red Wine And Bittersweet Chocolate

Ingredients

– 1 kg venison, cut into chunks
– 2 cups red wine
– 1 cup beef broth
– 1 large onion, chopped
– 2 garlic cloves, minced
– 2 tablespoons olive oil
– 2 tablespoons tomato paste
– 1 teaspoon cocoa powder
– 1 teaspoon dried thyme
– Salt and pepper, to taste

Method

1. Heat the olive oil in a large pot over medium heat.
2. Add the venison chunks and cook them until browned on all sides.
3. Stir in the onion and garlic, cooking until the onion becomes soft.
4. Pour in the red wine and beef broth, then add the tomato paste, cocoa powder, thyme, salt, and pepper.
5. Reduce heat to low and cover. Let it simmer for about 2 hours until the venison is tender.
