Ingredients
– 2 cups rice
– 4 cups water
– 1 tablespoon oil
– 1 small onion, chopped
– 2 cloves garlic, minced
– 1 cup mixed vegetables (like carrots and peas)
– 2 eggs
– 2 tablespoons soy sauce
– Salt and pepper to taste
– Chopped green onions for garnish
Method
1. Rinse the rice under cold water until the water runs clear. Drain well.
2. In a large pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low and cover. Cook for about 15-20 minutes until the rice is tender.
3. Heat the oil in a pan over medium heat. Add the chopped onion and minced garlic, cooking until soft.
4. Stir in the mixed vegetables and cook for another 3-4 minutes. Push everything to one side of the pan and crack the eggs onto the other side. Scramble the eggs until cooked.
5. Combine the cooked rice, soy sauce, salt, and pepper into the pan. Mix well and garnish with green onions before serving.
