Ingredients
– 2 cups pasta
– 1 can (400 g) diced tomatoes
– 1 can (400 g) cannellini beans, drained and rinsed
– 1/2 cup diced onion
– 2 cloves garlic, minced
– 1 tsp dried oregano
– 1 tsp dried basil
– 4 cups vegetable broth
– Salt, to taste
– Pepper, to taste
Method
1. Cook the pasta according to package instructions. Drain and set aside.
2. In a large pot, heat a little oil over medium heat. Add the onion and cook until soft.
3. Stir in the garlic, oregano, and basil. Cook for a minute until fragrant.
4. Pour in the diced tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer.
5. Add the beans and cooked pasta. Season with salt and pepper. Serve warm.
