Ingredients
– 2 cups rice
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 can (400 ml) diced tomatoes
– 1 ½ cups vegetable broth
– 1 teaspoon cumin
– 1 teaspoon paprika
– 1 cup frozen mixed vegetables
– Salt and pepper to taste
Method
1. Rinse the rice under cold water until the water runs clear.
2. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking until soft.
3. Stir in the diced tomatoes, vegetable broth, cumin, paprika, and cooked rice. Bring to a boil.
4. Add frozen mixed vegetables, reduce heat to low, cover, and let simmer for 20 minutes.
5. Season with salt and pepper, then fluff with a fork before serving.
