Ingredients
– 225 g unsalted butter, softened
– 1 ¾ cups caster sugar
– 4 large eggs
– 1 tablespoon lemon zest
– ½ cup freshly squeezed lemon juice
– 2 cups plain flour
– ½ teaspoon baking powder
– ½ teaspoon salt
– ¼ teaspoon baking soda
– 1 teaspoon vanilla extract
Method
1. Preheat the oven to 175 degrees Celsius and grease a loaf pan.
2. In a large bowl, beat the softened butter and caster sugar together until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition. Then stir in the lemon zest and lemon juice.
4. In a separate bowl, combine the flour, baking powder, salt, and baking soda. Gradually mix this dry mixture into the wet ingredients until just combined.
5. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a skewer inserted into the centre comes out clean.
