Ingredients
- 2 cups of water
- 1 cup of rice
- 1 teaspoon of salt
- 1 tablespoon of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup of frozen peas
- 1 carrot, diced
- 1 tablespoon of soy sauce
- 2 eggs, beaten
Method
- Start by rinsing the rice under cold water until the water runs clear.
- In a pot, combine water, rice, and salt. Bring it to a boil, then reduce heat to low. Cover and simmer for about 15 minutes.
- While the rice is cooking, heat olive oil in a large pan over medium heat. Add chopped onion and cook until soft.
- Stir in minced garlic, diced carrot, and peas. Cook for another 5 minutes, mixing occasionally.
- Add the cooked rice, soy sauce, and beaten eggs to the vegetable mix. Stir well to combine and cook until eggs are set.
