Ingredients
– 500 g minced beef
– 1 tsp cumin powder
– 1 tsp paprika
– 1 egg
– ½ cup breadcrumbs
– 1 medium onion, chopped
– 2 cloves garlic, minced
– 400 ml diced tomatoes
– 400 ml vegetable broth
– 1 cup kidney beans, drained
Method
1. In a bowl, mix minced beef with cumin, paprika, egg, and breadcrumbs.
2. Roll the mixture into small meatballs. Set them aside.
3. Heat a large pot over medium heat, then add chopped onion and minced garlic. Cook until soft.
4. Pour in diced tomatoes and vegetable broth. Add meatballs carefully, and bring to a gentle simmer.
5. Add kidney beans and cook for an additional 15 minutes until meatballs are cooked through.
