Ingredients
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 900 ml vegetable broth
– 450 g broccoli florets
– 1 large potato, peeled and diced
– 125 ml cream
– Salt, to taste
– Pepper, to taste
Method
1. Heat olive oil in a large pot over medium heat.
2. Add onion and cook for about 5 minutes until soft.
3. Stir in garlic, then pour in vegetable broth.
4. Add broccoli and diced potato. Bring to a boil, then simmer for 15 minutes until vegetables are tender.
5. Blend the soup until smooth, then stir in cream. Season with salt and pepper before serving.
