Ingredients
- 1 can (400g) refried beans
- 1 cup shredded cheese
- 4 large tortillas
- 1 teaspoon olive oil
- 1 teaspoon taco seasoning
- 1 cup diced vegetables (like bell peppers, onions, and corn)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Sour cream for serving
Method
- Heat the olive oil in a pan over medium heat. Add the diced vegetables and sauté until they are soft.
- Mix in the refried beans, taco seasoning, garlic powder, salt, and pepper. Stir everything together until warm.
- On one side of each tortilla, spread a layer of the bean mixture. Sprinkle cheese on top.
- Fold the tortillas in half and cook them in the same pan until they are golden brown on both sides.
- Serve the quesadillas with sour cream on the side.
