Ingredients
– 250 g mascarpone cheese
– 1 cup thickened cream
– ½ cup sugar
– 1 cup strong coffee, cooled
– 2 tbsp coffee liqueur
– 24 ladyfinger biscuits
– Cocoa powder, for dusting
– Dark chocolate, for decoration
– 1 tsp vanilla extract
Method
1. Start by whipping the cream until soft peaks form. Add sugar and vanilla extract, continuing to whip until stiff peaks appear.
2. In a separate bowl, mix the mascarpone cheese until smooth. Gently fold the cream mixture into the mascarpone until well combined.
3. Combine coffee and liqueur in a shallow dish. Quickly dip ladyfingers in the coffee mixture, making sure not to soak them.
4. Layer half of the dipped ladyfingers at the bottom of a dish. Spread half of the mascarpone mixture on top.
5. Repeat the layers with the remaining ladyfingers and mascarpone. Chill for at least 4 hours. Before serving, dust with cocoa powder and sprinkle shaved chocolate on top.
