Ingredients
– 3 medium zucchinis
– 1 cup tomato sauce
– 300 g firm tofu
– 1 teaspoon garlic powder
– 1 teaspoon dried basil
– 1 teaspoon onion powder
– 2 cups spinach
– 1 cup mushrooms, sliced
– 1 cup nutritional yeast
– 1 tablespoon olive oil
Method
1. Preheat the oven to 180°C.
2. Slice the zucchinis thinly lengthwise. Set them aside.
3. In a bowl, crumble the firm tofu and mix it with the garlic powder, onion powder, and basil.
4. Layer some zucchini slices at the bottom of a baking dish, then add half of the tofu mixture, some tomato sauce, mushrooms, and spinach.
5. Repeat with another layer of zucchini and the remaining ingredients. Finish with sauce and sprinkle nutritional yeast on top. Bake for 30 minutes.
