Ingredients
– 1 cup rice
– 400 ml canned beans
– 400 ml marinara sauce
– 2 tablespoons olive oil
– 1 teaspoon chili powder
– 1 teaspoon cumin
– 1 jalapeño, chopped
– Salt, to taste
– Black pepper, to taste
– Fresh coriander, for garnish
Method
1. Start by cooking the rice according to package instructions. Fluff it up when done.
2. Heat olive oil in a frying pan over medium heat. Add chili powder and cumin, cooking for about a minute.
3. Stir in the canned beans and the marinara sauce. Let it simmer for 5 minutes, allowing all the flavors to blend.
4. Mix in the chopped jalapeños and season with salt and pepper. Cook for another 3 minutes.
5. Serve the spicy bean sauce over the rice, garnished with fresh coriander.
