Ingredients
- 2 ripe avocados
- 1 lime, juiced
- 1 small onion, chopped
- 1 tomato, diced
- 1 teaspoon garlic powder
- Salt, to taste
- 8 flour tortillas
- 2 cups grated cheese
- Mint leaves, for garnish
- 100 ml mayonnaise
Method
- Start by cutting the avocados in half and removing the pits. Scoop the flesh into a bowl.
- Mash the avocados with a fork and mix in lime juice, chopped onion, diced tomato, garlic powder, and salt.
- Lay out four tortillas on a flat surface. Spread the guacamole mixture evenly over each tortilla.
- Top the guacamole with grated cheese and place another tortilla on top of each. Ensure they are pressed down gently.
- In a pan, heat a little oil over medium heat. Cook each quesadilla for about 3 minutes on both sides until golden brown and the cheese melts. Serve with mint mayo made by mixing mayonnaise and finely chopped mint leaves.
