Ingredients

– 2 cups mixed vegetables (carrots, beans, peas, etc.)
– 1 cup coconut milk
– 1 medium onion, chopped

– 2 green chilies, slit
– 1 teaspoon mustard seeds
– 1 tablespoon oil
– Salt to taste
– Water as needed

Method

1. Heat oil in a pan over medium heat. Add mustard seeds and wait for them to pop.
2. Stir in the chopped onion, ginger, and green chilies. Cook until the onion turns golden brown.
3. Add the mixed vegetables to the pan and sauté for a few minutes. Ensure they are well-coated with the spices.
4. Pour in the coconut milk and some water to achieve your desired consistency. Season with salt.
