Ingredients
– 9 sheets of lasagna pasta
– 2 cups of mixed vegetables (like zucchini, mushrooms, and spinach)
– 2 cups of ricotta cheese
– 1 cup of grated cheese
– 1 cup of marinara sauce
– 1 egg
– 1 clove of garlic, minced
– 1 teaspoon of dried oregano
– Salt and pepper to taste
– Olive oil
Method
1. Preheat the oven to 180°C.
2. In a large skillet, heat a splash of olive oil over medium heat. Add garlic and cook for about one minute until fragrant. Add mixed vegetables, salt, and pepper. Cook until softened, about 5 minutes.
3. Mix ricotta cheese, egg, oregano, and half of the grated cheese in a bowl. Stir until combined.
4. Start layering in a baking dish: spread a thin layer of marinara sauce, add pasta sheets, then layer the ricotta mixture and the cooked vegetables. Repeat until all ingredients are used, finishing with a layer of marinara.
5. Sprinkle the remaining grated cheese on top. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
