Ingredients
– 500 g sausages
– 500 g baby potatoes
– 2 cups carrots, chopped
– 1 red onion, cut into wedges
– 4 tablespoons olive oil
– 2 teaspoons garlic powder
– 1 teaspoon paprika
– 1 teaspoon dried oregano
– Salt to taste
– Pepper to taste
Method
1. Preheat the oven to 220°C (430°F).
2. Cut the baby potatoes and carrots into bite-sized pieces.
3. In a large bowl, combine sausages, vegetables, olive oil, garlic powder, paprika, oregano, salt, and pepper. Toss until everything is coated.
4. Spread the mixture evenly on a baking tray. Roast in the oven for about 30 minutes, turning halfway.
5. Once cooked, serve hot and enjoy.
