Ingredients
– 500 g potatoes, peeled and cubed
– 2 medium tomatoes, chopped
– 1 medium onion, finely chopped
– 2 tablespoons oil
– 1 teaspoon mustard seeds
– 1 teaspoon cumin seeds
– 1 teaspoon turmeric powder
– 1 teaspoon red chili powder
– Salt to taste
– Fresh coriander for garnish
Method
1. Heat oil in a large pan over medium heat.
2. Add mustard seeds and cumin seeds. Cook until they start to splutter.
3. Stir in the chopped onion and cook until it becomes translucent.
4. Mix in the tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften.
5. Add the cubed potatoes. Cover and cook for about 15 minutes, stirring occasionally, until the potatoes are tender. Garnish with fresh coriander.
