Ingredients

– 1 cup of rice
– 400 ml of vegetable broth
– 1 tablespoon of olive oil
– 1 onion, diced
– 2 cloves of garlic, minced
– 1 bell pepper, diced
– 1 cup of corn, frozen or fresh
– 1 can (400 g) of black beans, drained and rinsed
– 1 teaspoon of cumin
– 1 avocado, sliced

Method

1. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until it’s soft, about 5 minutes.
2. Stir in the minced garlic and diced bell pepper. Cook for another 2-3 minutes, until the bell pepper gets tender.
3. Add the rice, vegetable broth, corn, black beans, and cumin. Bring everything to a boil, then cover and reduce the heat to low.
4. Let it simmer for about 15 minutes, or until the rice absorbs the liquid and gets tender.
5. Serve the mixture in bowls and top with sliced avocado.
