Ingredients
- 2 medium zucchinis, chopped
- 1 can of corn, drained (about 400g)
- 1 can of white beans, drained and rinsed (about 400g)
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 1 can of diced tomatoes (about 400g)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 2 cups vegetable broth
Method
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic. Cook until the onion is soft.
- Stir in the chopped zucchini, corn, and white beans. Mix well.
- Add diced tomatoes, chili powder, cumin, and vegetable broth. Bring to a boil.
- Reduce heat and simmer for about 20 minutes. Serve warm.
