Zucchini Bread with Garlic Labneh
Ingredients
2 cups grated zucchini
2 cups plain flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup vegetable oil
Method
1. Preheat your oven to 180°C (350°F). Grease and flour a loaf tin.
2. In a large bowl, combine the grated zucchini, eggs, sugar, vanilla, and oil. Mix everything together well.
3. In another bowl, sift together the flour, baking powder, baking soda, salt, and cinnamon. Gradually add this dry mixture to the wet ingredients, stirring just until combined.
4. Pour the batter into the prepared loaf tin. Bake for about 50 minutes or until a skewer comes out clean.
5. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
