Ingredients
– 2 cups of water
– 1 cup of quinoa
– 1 tablespoon of olive oil
– 1 red onion, chopped
– 2 garlic cloves, minced
– 1 zucchini, diced
– 1 bell pepper, diced
– 1 teaspoon of cumin
– 1 cup of cherry tomatoes, halved
– 1 cup of fresh parsley, chopped
Method
1. Bring water to a boil in a medium saucepan.
2. Add quinoa and reduce heat to low.
3. Cover and simmer for about 15 minutes or until the quinoa is fluffy.
4. In a large pan, heat olive oil and sauté onion and garlic until soft.
5. Add zucchini, bell pepper, cumin, and cherry tomatoes. Cook until vegetables are tender. Stir in quinoa and parsley before serving.
