Ingredients
– 1 cup of rice
– 2 cups of water
– 1 tablespoon of olive oil
– 1 onion, chopped
– 2 cloves of garlic, minced
– 2 carrots, diced
– 1 zucchini, diced
– 1 can of diced tomatoes (400g)
– 1 teaspoon of dried herbs
– Salt and pepper to taste
Method
1. Begin by rinsing the rice under cold water in a fine sieve.
2. In a medium pot, heat olive oil over medium heat. Add the onion and garlic, cooking until soft.
3. Stir in the carrots and zucchini, and sauté for a few minutes until they start to soften.
4. Pour in the water and bring to a boil. Add the rinsed rice, diced tomatoes, dried herbs, salt, and pepper.
5. Reduce the heat to low, cover the pot, and simmer for about 20 minutes or until the rice is tender.
