Ingredients
- 2 cups whole wheat flour
- 1 teaspoon salt
- 1 packet dry yeast
- 1 tablespoon honey
- 1 cup warm water (around 40°C)
- 1 tablespoon olive oil
- 1 large onion, sliced
- 1 tablespoon fresh rosemary, chopped
- 1 teaspoon black pepper
- Extra olive oil for cooking
Method
- Heat a little olive oil in a pan over medium heat and add the sliced onion. Cook until caramelized, stirring often, for about 15-20 minutes. Set aside when done.
- In a large bowl, mix the warm water, honey, and dry yeast. Let it sit for about 5 minutes until bubbly.
- Add whole wheat flour, salt, and olive oil into the yeast mixture. Stir until combined into a dough.
- Knead the dough on a floured surface for about 5-10 minutes until smooth. Place in a greased bowl and cover it with a cloth. Let it rise for at least 1 hour, or until doubled in size.
- After rising, add the caramelized onions, rosemary, and black pepper. Fold gently to mix. Shape into a loaf and place in a greased bread pan. Let it rise for another 30 minutes before baking at 180°C for 25-30 minutes.
