Weekly Meal Plan: Simple, Healthy Recipes For December 15, 2024

Ingredients

– 1 cup rice
– 2 cups water
– 500 g chicken breast
– 1 tablespoon olive oil
– 1 cup broccoli, chopped
– 1 carrot, sliced
– 2 tablespoons soy sauce
– 1 teaspoon garlic, minced
– 1 teaspoon ginger, minced
– Salt and pepper to taste

Method

1. Rinse the rice in cold water until the water runs clear.
2. In a pot, bring the water to a boil. Add the rice, reduce heat to low, and cover. Cook for about 15 minutes or until all the water is absorbed.
3. While the rice cooks, heat olive oil in a large pan. Add the chicken and season with salt and pepper. Cook for about 6-7 minutes on each side, or until cooked through.
4. Add broccoli, carrot, garlic, and ginger to the chicken. Stir and cook for another 5 minutes until the vegetables are tender.
5. Pour soy sauce over the chicken and vegetables. Mix well and serve on a plate with the rice.
