Ingredients
– 500 g chicken breast, diced

– 1 onion, chopped
– 2 garlic cloves, minced
– 1 bell pepper, sliced
– 400 ml diced tomatoes (canned)
– 1 teaspoon dried oregano
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 2 cups cooked rice
Method
1. Heat olive oil in a large skillet over medium heat.
2. Add the chopped onion and minced garlic, cooking until they become soft.
3. Stir in the diced chicken and cook until browned on all sides.
4. Add the bell pepper, diced tomatoes, oregano, salt, and black pepper. Simmer for 15 minutes.
5. Serve the chicken mixture over the cooked rice.
