Ingredients
– 500g chicken breast, diced
– 2 tablespoons olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 red bell pepper, sliced
– 1 zucchini, diced
– 400g canned diced tomatoes
– 1 teaspoon dried oregano
– 1 teaspoon salt
– 1/2 teaspoon black pepper
Method
1. Heat olive oil in a large pan over medium heat.
2. Add chopped onion and garlic. Sauté for about 3 minutes until soft.
3. Stir in the diced chicken and cook until browned, around 5 minutes.
4. Mix in the bell pepper, zucchini, diced tomatoes, oregano, salt, and pepper.
5. Simmer for 20 minutes until vegetables are tender and chicken is cooked through.
