Ingredients
1 cup rice
2 cups water
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 bell pepper, chopped
1 zucchini, chopped
1 can diced tomatoes (400g)
1 teaspoon dried oregano
Salt and pepper to taste
Method
1. Rinse the rice under cold water until the water runs clear.
2. In a medium saucepan, combine the rice and water. Bring to a boil. Reduce the heat to low, cover, and simmer for about 15 minutes or until the water is absorbed.
3. While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the onion and garlic, cooking for about 2-3 minutes until fragrant.
4. Add the bell pepper and zucchini to the skillet. Stir and cook for another 5 minutes until they start to soften.
5. Mix in the diced tomatoes, oregano, salt, and pepper. Cook for an additional 5 minutes. Serve the vegetable mixture over the fluffy rice.
