Ingredients
– 2 cups rice
– 4 cups water
– 2 tablespoons oil
– 1 onion, diced
– 2 garlic cloves, minced
– 2 carrots, chopped
– 1 cup frozen peas
– 4 eggs
– 3 tablespoons soy sauce
– Salt and pepper to taste
Method
1. Rinse the rice under cold water until it runs clear. Combine the rice and water in a large pot and bring it to a boil. Reduce heat and let it simmer for about 15 minutes or until the water is absorbed.
2. Heat the oil in a large pan over medium heat. Add the diced onion and cook until it’s soft, around 3 to 4 minutes. Stir in the minced garlic and cook for an additional minute.
3. Mix in the chopped carrots and cook until they are tender, about 5 minutes. Then, add the frozen peas and continue to stir for another 2 minutes.
4. Push the veggies to one side of the pan. Crack the eggs into the empty space. Scramble the eggs until fully cooked, then mix everything together.
5. Finally, add the cooked rice to the pan along with the soy sauce. Stir well to combine everything. Season with salt and pepper to taste.
