Ingredients
– 1 cup rice
– 2 cups water
– 500g chicken breast, diced
– 1 tablespoon olive oil
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 cup frozen mixed vegetables
– 2 tablespoons soy sauce
– 1 tablespoon honey
– Salt and pepper to taste
Method
1. Rinse the rice under cold water until the water runs clear.
2. In a pot, combine the washed rice and water. Bring to a boil, reduce heat to low, cover, and let it simmer for 15 minutes or until cooked.
3. While the rice is cooking, heat olive oil in a large pan over medium heat. Add the diced chicken and cook until it turns golden brown.
4. Sprinkle garlic powder, onion powder, salt, and pepper over the chicken. Stir in the frozen vegetables and cook for another 5 minutes.
5. Mix soy sauce and honey together in a small bowl. Pour this sauce over the chicken and veggies. Serve over the cooked rice.
