Ingredients
– 500 g chicken breast, diced
– 2 cups mixed vegetables (like carrots, peas, and corn)
– 1 cup uncooked rice
– 1 onion, chopped
– 2 cloves garlic, minced
– 750 ml chicken broth
– 2 tablespoons olive oil
– 1 teaspoon dried thyme
– Salt, to taste
– Pepper, to taste
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic. Cook until the onion is soft.
3. Stir in the diced chicken and cook until it is browned on all sides.
4. Add the mixed vegetables, uncooked rice, chicken broth, dried thyme, salt, and pepper. Bring to a boil.
5. Reduce the heat to low and cover the pot. Let it simmer for about 20 minutes, or until the rice is cooked.
