Ingredients

– 1 cup quinoa
– 2 cups water
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 can black beans, drained and rinsed
– 1 cup corn (fresh or frozen)
– 1 teaspoon cumin
– 1 teaspoon paprika
– 1 avocado, diced

Method

1. Rinse the quinoa under cold water in a fine mesh strainer.
2. In a pot, combine quinoa and water. Bring to a boil, then reduce heat and cover. Let it simmer for about 15 minutes or until liquid is absorbed.
3. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until soft, about 5 minutes.
4. Stir in garlic, black beans, corn, cumin, and paprika. Cook for another 5 minutes, stirring occasionally.
5. Fluff the cooked quinoa with a fork and combine it with the bean mixture. Top with diced avocado before serving.
