Ingredients
– 500 g zucchinis, diced
– 1 large onion, chopped
– 2 cloves garlic, minced
– 1 large carrot, grated
– 1 bell pepper, chopped
– 800 g canned crushed tomatoes
– 1 tsp dried oregano
– 1 tsp basil
– 1/2 tsp salt
– 1/4 tsp pepper
Method
1. Heat a large pot over medium heat and add a splash of oil.
2. Add the chopped onion, garlic, carrot, zucchinis, and bell pepper. Cook them for about 5-7 minutes until they soften.
3. Stir in the crushed tomatoes along with oregano, basil, salt, and pepper.
4. Bring the mixture to a boil, then reduce to a simmer. Cook uncovered for about 15-20 minutes.
5. Stir occasionally until the sauce thickens. Serve it over your favorite pasta.
