Ingredients
– 1 kg potatoes
– 1 cup flour
– 1 teaspoon salt
– 2 tablespoons olive oil
– 300 g kale
– 2 garlic cloves
– 100 ml vegetable broth
– 1 lemon (juice and zest)
– Pepper to taste
– Nutritional yeast (optional)
Method
1. Boil the potatoes in salted water until tender. Drain and let them cool slightly.
2. Once cooled, peel the potatoes and mash them in a bowl. Add the flour and salt. Mix until a dough forms.
3. Roll the dough into long strips and cut them into small pieces. Press each piece with a fork to create ridges.
4. Heat olive oil in a pan. Add minced garlic and chopped kale, cooking until the kale is soft. Pour in vegetable broth and stir.
5. Cook the gnocchi in boiling water until they float. Once they rise, drain them and toss in the kale sauce. Add lemon juice, zest, and pepper.
