Ingredients
– 3 cups cooked rice, preferably day-old
– 2 tablespoons oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 carrot, diced
– 1 cup frozen peas
– 2 eggs, beaten
– 2 tablespoons soy sauce
– 1 teaspoon sesame oil
– 2 spring onions, sliced
Method
1. Heat oil in a large pan over medium heat. Add the chopped onion and cook until it’s soft, about 3 minutes.
2. Stir in the minced garlic and diced carrot. Cook for another 2 minutes until the carrot is tender.
3. Push the vegetables to one side of the pan. Pour the beaten eggs into the other side. Scramble them until fully cooked.
4. Mix in the cooked rice and frozen peas. Stir everything together and heat through for 3 to 4 minutes.
5. Pour in the soy sauce and sesame oil, then sprinkle the spring onions on top. Stir well and enjoy your fried rice.
