Ingredients
– 2 cups of rice
– 4 cups of water
– 1 tablespoon of olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 cup of frozen mixed vegetables
– 1 cup of cooked chicken, shredded
– 2 tablespoons of soy sauce
– Salt, to taste
– Pepper, to taste
Method
1. Rinse the rice thoroughly under cold water and drain.
2. In a large pot, combine the rice, water, and a pinch of salt. Bring to a boil.
3. Once boiling, reduce the heat, cover, and let it simmer for about 15 minutes.
4. While the rice cooks, heat olive oil in a frying pan. Add chopped onion and minced garlic, sauté until soft.
5. Stir in mixed vegetables and shredded chicken, cooking until heated through. Add soy sauce, pepper, and mix with the cooked rice.
