Ingredients
– 4 chicken breasts
– 1 tablespoon olive oil
– 2 teaspoons salt
– 1 teaspoon black pepper
– 1 teaspoon garlic powder
– 1 teaspoon paprika
– 500 ml chicken broth
– 2 cups mixed vegetables
– 1 cup rice
– 2 cups water
Method
1. Preheat the oven to 200°C.
2. Place chicken breasts in a baking dish and drizzle olive oil over them.
3. Sprinkle salt, pepper, garlic powder, and paprika onto the chicken, then rub the spices in.
4. Pour chicken broth into the dish, then add mixed vegetables on top of the chicken.
5. Add rice and water. Cover the dish with foil and bake for 30-35 minutes or until the chicken is cooked through.
