Ingredients
– 500 g chicken breast, diced
– 2 cups broccoli florets
– 1 cup carrots, sliced
– 1 cup bell peppers, chopped
– 3 cloves garlic, minced
– 2 tablespoons soy sauce

– 1 teaspoon ginger, grated
– 1 cup cooked rice
Method
1. Heat olive oil in a large pan over medium heat.
2. Add garlic and ginger, sauté for about 1 minute until fragrant.
3. Put in the chicken and stir-fry for 5-7 minutes until cooked through.
4. Toss in the broccoli, carrots, and bell peppers, then cook for another 5 minutes until vegetables are tender.
5. Pour soy sauce and black pepper over the mixture, stirring well before serving it over cooked rice.
