Ingredients
2 cups rice
1 tablespoon olive oil
1 onion, diced
2 garlic cloves, minced
1 bell pepper, diced
1 can (400g) diced tomatoes
1 tablespoon paprika
1 teaspoon cumin
4 cups vegetable broth
Salt and pepper to taste
Method
Heat olive oil in a large pot over medium heat.
Add diced onion and cook until soft, about 5 minutes.
Stir in minced garlic and chopped bell pepper; cook for 2 more minutes.
Mix in the rice, diced tomatoes, paprika, and cumin.
Pour in the vegetable broth, then season with salt and pepper. Bring to a boil, reduce heat, and simmer covered for 20 minutes.
