Ingredients

– 4 chicken thighs

– 1 cup cherry tomatoes, halved
– 1 cup spinach, chopped
– 125 ml chicken broth
– 100 g feta cheese, crumbled

Method

1. Preheat your oven to 200°C (400°F).
2. Season the chicken thighs with salt and pepper. Heat olive oil in a large oven-safe skillet over medium-high heat.
3. Add the chicken thighs to the skillet and cook until browned, about 5 minutes on each side.
4. Stir in garlic and oregano, then mix in the cherry tomatoes, spinach, and chicken broth.
5. Sprinkle crumbled feta cheese on top. Transfer to the oven and bake for 20-25 minutes until the chicken is cooked through.
