Ingredients
– 500 g ground turkey
– 1 tablespoon olive oil
– 1 onion, chopped
– 1 bell pepper, diced
– 2 teaspoons taco seasoning
– 400 ml canned diced tomatoes
– 400 ml canned black beans, rinsed
– 200 g corn, frozen or canned
– 4 cups cooked rice
– 1 avocado, sliced
Method
1. Heat the olive oil in a large pan over medium heat.
2. Cook the chopped onion and diced bell pepper for about 5 minutes until they are soft.
3. Add the ground turkey and taco seasoning, cooking until the turkey is no longer pink.
4. Stir in the canned tomatoes, black beans, and corn. Simmer for 10 minutes.
5. Serve the turkey mixture over the cooked rice and top with avocado slices.
