Ingredients
– 400 g canned lentils, rinsed and drained
– 1 cup diced tomatoes
– 1 cup vegetable broth
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 teaspoon cumin
– 1 teaspoon paprika
– Salt to taste
– Pepper to taste
Method
1. Heat the olive oil in a pot over medium heat.
2. Add the chopped onion and cook until it’s soft and transparent, about 5 minutes.
3. Stir in the minced garlic, cumin, and paprika. Cook for another minute until fragrant.
4. Pour in the diced tomatoes and vegetable broth. Bring the mixture to a simmer.
5. Add the rinsed lentils, season with salt and pepper, and cook for 10 minutes.
