Ingredients
– 400 g canned lentils, drained and rinsed
– 1 tablespoon olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 1 carrot, diced
– 1 teaspoon ground cumin
– 1 teaspoon smoked paprika
– 400 g diced tomatoes
– 2 cups vegetable broth
– Salt and pepper to taste
Method
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and cook for about 5 minutes until softened.
3. Stir in the minced garlic and diced carrot, cooking for another 3 minutes.
4. Sprinkle in cumin and smoked paprika. Mix well, then add the rinsed lentils and diced tomatoes.
5. Pour in vegetable broth, season with salt and pepper, and let everything simmer for 20 minutes.
