Tortilla-Crusted Shrimp Po’ Boy Tacos: A Flavorful Delight

Ingredients

  • 450 g shrimp, peeled and deveined
  • 1 cup tortilla crumbs
  • ½ cup plain flour
  • 1 large egg
  • 1 tsp paprika
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 4 small tortillas
  • 2 cups shredded lettuce
  • 1 tomato, sliced

Method

  1. Preheat the oven to 200°C.
  2. In a bowl, mix flour, paprika, and a pinch of salt. In another bowl, beat the egg.
  3. Coat each shrimp in the flour mixture, then dip it in the egg, and finally cover it with tortilla crumbs.
  4. Arrange shrimp on a baking tray and bake for about 12-15 minutes until crispy.
  5. Spread mayonnaise and lemon juice on each tortilla. Add lettuce, sliced tomato, and shrimp before folding.
