Ingredients
- 450 g shrimp, peeled and deveined
- 1 cup tortilla crumbs
- ½ cup plain flour
- 1 large egg
- 1 tsp paprika
- 2 tbsp mayonnaise
- 1 tbsp lemon juice
- 4 small tortillas
- 2 cups shredded lettuce
- 1 tomato, sliced
Method
- Preheat the oven to 200°C.
- In a bowl, mix flour, paprika, and a pinch of salt. In another bowl, beat the egg.
- Coat each shrimp in the flour mixture, then dip it in the egg, and finally cover it with tortilla crumbs.
- Arrange shrimp on a baking tray and bake for about 12-15 minutes until crispy.
- Spread mayonnaise and lemon juice on each tortilla. Add lettuce, sliced tomato, and shrimp before folding.
