Ingredients
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 400g diced tomatoes
– 1 teaspoon dried oregano
– 1 teaspoon paprika
– 300g spinach, fresh
– 4 eggs
– Salt, to taste
– Pepper, to taste
Method
1. Heat olive oil in a skillet over medium heat.
2. Add the chopped onion and sauté until it becomes soft.
3. Stir in minced garlic and cook for an additional minute.
4. Mix in the diced tomatoes, oregano, and paprika. Simmer for 5 minutes.
5. Gently fold in fresh spinach and create four wells in the mixture. Crack an egg into each well. Cover the skillet and cook until eggs are set. Season with salt and pepper before serving.
