Ingredients
– 500 g chicken breast, chopped
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 1 bell pepper, diced
– 400 g canned tomatoes
– 300 ml chicken broth
– 1 tsp dried oregano
– 1 tsp salt
– 1 tsp black pepper
– 2 cups cooked rice
Method
1. Heat a large skillet over medium heat and add the chopped chicken. Cook until browned, about 5-7 minutes.
2. Add the onion and garlic, stirring until softened for 3-4 minutes.
3. Toss in the bell pepper and cook for another 3 minutes.
4. Pour in the canned tomatoes and chicken broth. Season with oregano, salt, and black pepper. Stir well and bring to a simmer.
5. Once cooked, serve the chicken mixture over the cooked rice.
