Ingredients
1 cup of water
2 cups of rice
1 tablespoon of olive oil
1 teaspoon of salt
1 onion, chopped
2 garlic cloves, minced
1 cup of frozen mixed vegetables
2 cups of chicken broth
1 teaspoon of pepper
1 cup of cooked chicken, shredded
Method
1. Boil the water in a pot. Once boiling, add the rice, salt, and olive oil. Stir and cover the pot. Lower the heat and let it cook for 18 minutes.
2. While the rice cooks, heat a pan over medium heat. Add the chopped onion and sauté until it turns golden. This should take about 5 minutes.
3. Next, add the minced garlic to the pan. Cook for an additional minute until fragrant.
4. Pour the chicken broth into the pan along with the frozen vegetables and pepper. Stir everything well and let it simmer for 10 minutes.
5. Once the rice is ready, fluff it with a fork. Combine the rice with the vegetable mix and shredded chicken in the pan. Stir until heated through and serve.
