Ingredients
– 2 cups rice
– 4 cups water
– 1 tablespoon vegetable oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 cup mixed vegetables (fresh or frozen)
– 2 tablespoons soy sauce
– 1 teaspoon salt
– 1/2 teaspoon pepper
– 2 eggs
Method
1. Rinse the rice under cold water until the water runs clear.
2. In a large pot, bring 4 cups of water to a boil. Add the rice. Lower the heat and cover. Cook for about 18 minutes or until the water is absorbed.
3. While the rice cooks, heat vegetable oil in a skillet over medium heat. Add chopped onion and sauté until soft.
4. Next, add minced garlic and mixed vegetables to the skillet. Stir for about 5 minutes until they are soft.
5. Beat the eggs in a bowl. Push the veggies to one side of the skillet. Pour the eggs into the other side and scramble. Once cooked, mix everything together. Add soy sauce, salt, and pepper. Stir to combine.
